Instructions:

Crustless Spinach Quiche

1 (10 ounce) package frozen chopped spinach,
    thawed and drained well
1 cup cottage cheese
1/4 pound Cheddar cheese, shredded
1 small onion, sliced
1 tablespoon oil
1/4 teaspoon garlic powder
Pinch cayenne pepper
4 eggs
1/3 cup milk
1/2 teaspoon dried basil

Preheat oven to 325 degrees F.

In blender of food processor, blend cheeses, onions, oil, seasonings, eggs and milk until smooth. Pour into bowl with spinach and blend well.

Grease a 9-inch pie plate. Pour in mixture. Bake 35-45 minutes or until knife inserted in center comes out clean. Let stand for 10 minutes before cutting.

Serves 4-6.
