Instructions:
Spicy Banana Fruit Cake
3 1/2 cups sifted flour
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons cinnamon
2 teaspoons ginger
1 teaspoon nutmeg
1 1/3 cups shortening
1 1/3 cups granulated sugar
4 eggs, beaten
2 cups mashed ripe banana
1 1/2 cups chopped nuts
1 cup raisins
4 cups diced candied fruits
Sift dry ingredients.
Cream shortening. Gradually blend in sugar. Beat in eggs. Add flour mixture alternately with banana. Mix raisins, nuts and candied fruits into batter. Turn into two well greased and floured 9-inch loaf pans. Bake at 300 degrees F for 2 hours or until done.
